1. Chocolate Orange Bites

Ingredients

  • 1 cup – oats, dry
  • 1/2 cup – peanut butter, all-natural
  • 2 tablespoon – honey
  • 2 tablespoon – coconut flakes
  • 1 tablespoon – orange juice
  • 1/2 teaspoon – vanilla extract
  • 2 teaspoon – orange zest
  • 1 cup – chocolate chips, semisweet

Directions

  • Zest orange.
  • Place all the ingredients except the chocolate into a large bowl. Mix with a spoon until well combined.
  • Roll the mixture into 10 equal sized balls and place them in the refrigerator for 30 minutes to firm up.
  • Melt the chocolate and drizzle it over the energy bites. Return them to the refrigerator for another 10 minutes.
  • Eat straight away or keep in an airtight container in the refrigerator for up to 5 days.
2. Banana Rolls

Ingredients

  • 1/2 cup – cream cheese, low fat
  • 2 teaspoon – honey
  • 1/4 teaspoon – cinnamon
  • 3 medium – banana
  • 3 medium – tortilla, whole wheat

Directions

  • Mix cream cheese, honey and cinnamon in a small bowl.
  • Spread on the tortilla.
  • Place a whole banana on the tortilla and roll up.
  • Place on a hot griddle or pan. Grill until golden on both sides.
  • Slice into small rounds and serve with toothpicks. You can also slice in half and eat it like a burrito.
3. Chicken Kabobs With Peanut Sauce

Ingredients

For the chicken:

  • 12 ounces boneless, skinless chicken breast (about 1 large)
  • 2 tablespoons vegetable oil
  • 2 tablespoons lower-sodium soy sauce
  • for the peanut sauce:
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons lower-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon chopped scallion greens
  • 1/8 teaspoon garlic powder

Directions

For the chicken:

  • Cut the chicken into 1/4-inch strips across the grain.
  • Lay the strips on a cutting board and gently flatten by pounding with your fistthey will be a variety of shapes and sizes.
  • If some slices are very long (more than three bites), you may need to cut them in two.
  • Place the chicken in a bowl with the oil and soy sauce and turn the chicken in the sauce to coat.
  • Let the chicken marinate at room temperature for at least 20 minutes, or refrigerate overnight.

For the peanut sauce:

  • Combine the peanut butter, soy sauce, lime juice, honey, scallions, garlic powder and red pepper flakes in a bowl and whisk together.
  • Preheat a flat griddle over medium heat.
  • Remove chicken from marinade, pat dry and thread onto skewers; discard the marinade.
  • Place the chicken on the hot griddle so that the skewers are positioned away from the direct heat and cook the chicken until golden brown, 2 to 3 minutes per side.
  • Serve the skewers with peanut sauce for dipping.
4. Dessert Dip

Ingredients

  • 1 cup Icelandic Skyr yogurt
  • 1 tbs cocoa powder
  • 1 tbs honey
  • ½ tsp vanilla extract
  • sliced strawberries, for dipping
  • sliced apple, for dipping
  • sliced watermelon, for dipping
  • sliced dates, for dipping

Method

  • Place all ingredients, except fruit, in a medium mixing bowl and stir to combine.
  • Transfer to a serving bowl and serve with sliced fruit.
5. Veggie Squares

Ingredients

  • 2 cans/tubes low-fat crescent rolls
  • 1 8 oz pkg. Greek cream cheese (or you can use low-fat)
  • 1/4 to 1/2 c.  dressing
  • 1/2 c. shredded carrots
  • 1/2 c. finely chopped broccoli
  • 1/2 c. finely chopped onion
  • 1/2 c. finely chopped red pepper
  • 1/2. c. chopped cucumber

Optional toppings

  • Sliced olives
  • Diced avocado
  • Fresh chopped tomatoes

Instructions

  • Preheat oven to 375-degrees. Spread crescent rolls out on a baking/cookie sheet. Press edges together to form a crust.
  • Bake for about 11 minutes or until crust turns golden-brown. Remove from oven and allow to cool.
  • Combine cream cheese and ranch dressing until smooth and spread evenly with a rubber spatula over the crust.
  • Top crust evenly with veggies, lightly pressing them down to they don’t fall off when you cut them up.
  • Cut evenly into squares and serve.
  • Makes approximately 25-30 squares.
